Living and working in isolation has changed the way we behave, and eating throughout the day is a big part of that. And no, this isn't the *first* time we've posted about this topic on Red Carpet. We have a full [Prophix Customer Summer Cookbook](https://prophix.influitive.com/forum/t/check-out-the-prophix-customer-summer-cookbook/198) here on the discussion forum, built 100% from your recipes.
So now we want to know what you’re eating and drinking at home. I’ll send along bonus points if you show us a photo with your explanation. There’s nothing wrong with eating simply and showing us that, too.
I’ll go first! I have young, growing kids, and I try to cook a lot. I saw an article about a place in downtown Toronto that delivers fresh fish at wholesale prices. So I ordered $250 of fish and vacuum-sealed it for eating over time. Here’s part of the first dinner I cooked: pan-seared ahi tuna, with melted cheese over blanched vegetables in the oven: potatoes, broccoli, Chinese broccoli, and asparagus.
I have been cooking loads more than I normally would, and trying to make different things that we might normally eat out. As well as baking! (obviously not while I am meant to be working!)
Here’s some pictures of the things that have been the biggest success (there has been some not to successful attempts!)
Homemade Nando’s with macho peas which is my new favourite thing to make at home
Lasagna with ALL THE CHEESE!!!
Chocolate brownies, because sometimes you just need chocolate
Banana and Rum loaf - tasty and slightly alcoholic (luckily no kids in our house so this is ok!)
Coffee loaf with cream cheese frosting. This worked loads better than I thought.
The one downside… I have also been eating all the cake
Wow! All of this looks amazing! I’m super impressed with the fact that you made Nando’s at home! How did you do that? Is there a specific recipe that you use or do you use the Nando’s sauce on some homemade grilled chicken?
It was just a whole chicken that I spatchcocked and used Nando’s sauce with a bit of extra chilli and lemon juice and marinaded it for a few hours, Then cooked it in the oven for about 45-50 minutes.
The peas are super easy! Boil some peas, finely dice some fresh chilli and mint, once the peas are cooked sort of mash half of them, add a load of butter and let it melt over a low heat then stir in the chilli and mint and eat (trying not to think about the amount of butter )
That sounds so delicious! The Canadian locations of Nando’s actually don’t have the macho peas, so this is awesome to get a recipe of how to make something like it!
Similar to @kristen.compton, I’ve been making Hello Fresh meals, too. Usually, I make those for dinner.
Now that I have more time in the mornings (since I don’t have to commute!) I have been trying to make more brunch-type meals. I used to love going out for brunch with friends so we’ve switched to having virtual brunch hangouts on the weekend. Here are some of the kind of brunch meals I’ve been making:
This one is really silly, but I’m really grateful that I bought Trader Joe’s Everything but the Bagel Spice before our borders closed… We can’t get this kind of stuff in Canada easily. I know I sound like such a millennial but I love to use this bagel spice as a topping for my avocado toast.
Oh my gosh! Everything looks so delicious I’ve been cooking a lot, picking up Chipotle on a pretty regular basis and sneaking to Chick-Fil-A when in need of a warm cookie! I haven’t been photographing my meals …aside from the delicious smoothie that I make on a daily basis (my favorite!)
We’ve been doing more cooking but we still patronize our favorite restaurants (eg Caribbean style & Chipotle.) Pictured is a vegan spinach & almond ricotta Ravioli (can be found at Whole foods) with veggies. Marcus made a homemade Italian dip for our toasted bread
I am trying out some new recipes and sharing with the neighbours! This past weekend it was Nanaimo Bar Cheesecake. The filling has a velvety smooth texture.
Still had a bunch of hardwood scraps from our factory which I use for barbecues from time to time. grilled up some teriyaki chicken last Sunday which my kids devoured like never before (they usually don’t like chicken!)
